This introductory course will help you to start to build the skills, knowledge and confidence you need to get a junior level job in the catering industry. Covering a wide range of food preparation and cooking skills and knowledge based theory, all content is up to date and relevant to today's food industry. All sessions are delivered in our modern, student-run restaurant, Enfields Kitchen, which is open to the public serving lunch and dinner.
You will study:
- Introduction to the catering industry
- Maintaining food safety when preparing and cooking and serving food
- How to prepare and cook basic dough products
- How to prepare and cook vegetables
- Working as part of a hospitality team
- Preparing and cooking meat products
- Maintaining customer care.
This course is delivered by our friendly and highly skilled teaching team who will help you to gain the skills and confidence you need. As experience teachers, they will adapt their teaching style to suit you to ensure your learning experience is as enjoyable as possible. Returning often to industry means their skills are up to date and course content is relevant to today's industry.
The college has close links with a variety of employment partners to suit
individual learners gain the most from work experience.
Practical experience is captured in a personal diary that is completed by the learners and signed off by the employer.
Our professional partners include some of the best known restaurants in the North East including the 21 Group, owners of Cafe 21, Broad Chare and St Vincents, Peace and Loaf, the Marriott Hotel group, Beamish Hall Hotel, Sage Gateshead, Beamish Museum and Marco Pierre White.
All practical sessions are taught in our modern and well-equipped trianing kitchens which are all industry standard and form part of Enfields Kitchen, our student-run restaurant which is open to the public serving a modern menu each week at lunch and dinner.
You will be invited to buy a uniform and knife kit to use during the course. We will share prices of these when you enrol.
