The hospitality and catering industry is a fast-paced, creative world with a wealth of opportunities on offer. If you want to progress your career in this field in the specialist area of patisserie, this course is for you.

You will be trained by our experienced team of lecturers in our professional standard kitchens which rival any you'll find in the industry. You will also be preparing dishes for paying customers in our student-run restaurant, Enfields Kitchen.

Course Content

Throughout the course, you'll develop your technical skills in producing:

  • Complex pastry products
  • Marzipan pastillage and sugar products
  • Complex bread and dough items
  • Cakes, biscuits, sponges and scones
  • Chocolate products
  • Hot and cold desserts
  • Healthy dishes, sauces coatings and fillings
  • Health and safety
  • How to be an effective team member


Throughout the course, you will be assessed by building a portfolio of evidence and observation of practical tasks in the kitchen.

Kit & Uniform

During the course, you will need to wear a Gateshead College catering uniform which you will need to buy, along with a course book and knife kit. We will discuss this with you at your interview and induction.


On completion of the course, you can progress onto Level 4 or a Foundation Degree in hotel and catering management. Alternatively you could progress straight into employment. Pastry chefs are in demand and there are also opportunities for those interested in setting up their own business.

  • The Feathers Inn
  • Jesmond Dene House
  • The Ritz Hotel London

They've also had the opportunity to undertake a variety of experiences, from making high tea for Japanese dignitaries in Komatsu, Japan to running events for local restaurant owners.

Days & Times

Tuesdays 5pm to 9pm and Wednesdays 5.15pm to 7.15pm at Baltic Campus.

An interview is required and equipment is needed.

Qualifications needed

You will need to have achieved Level 2 Cookery or have equivalent skills

Required experience

Experience of working at Level 2 in Professional Cookery.

The cost of this course varies depending on your age and circumstances.

If you are under 19 years old, this course is free.

If you are aged over 19 years old you may qualify for free or reduced price course fees, depending on your circumstances.

If you already have a full level 3 qualification and are aged 19 years over, you can apply for an Advanced Learning Loan or pay the fee upfront in full and qualify for a 10% discount.
